Tropical Salsa

  • ½ cup diced cucumbers
  • 1 cup mango
  • ½ cup diced pineapple
  • ½ cup diced peaches
  • ½ cup diced red pepper
  • 2 tbsp fresh lime juice
  • 2 tbsp Scallions or red onion
  • 1-2 diced jalapeño peppers
  • 3 Tbsp. Finely chopped fresh cilantro


  • Add all of the ingredients into a bowl and mix well.
  • Let salsa rest for at least 30 minutes to let all of the flavors blend.
  • Serve with chips or as a side to fish.



Optional fruit:  watermelon, papaya, kiwi, star fruit, avocados.  Add. 1/2 cup each to the salsa.  If you add more than a cup of additional fruit increase the cilantro and lime juice to taste.
