Rainbow waffles - Homemade

Rainbow waffles are a bright and fun and cheeful way to start your kiddo's day. Add some whipped cream and sprinkles and they will be gone in no time at all.

Equipment

  • mini waffle maker
  • 4 squeeze/decorating plastic bottles

Ingredients

  • 2 cups All-purpose Flour(240g)
  • 2 tbsp granulated Sugar
  • 2 tbsp Corn Starch
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 2 large Eggs
  • 2 cups Buttermilk
  • 4 tbsp. melted Butter Let cool a bit before adding so it doesn't cook the eggs.
  • 1 tsp Vanilla or Almond Extract

Instructions

  • Preheat mini waffle maker.
  • Mix together the dry ingredients in a mixing bowl. Flour, sugar, corn starch, baking powder, baking soda, and salt.
  • Add the liquid ingredients: buttermilk, eggs, flavoring, and melted butter.
  • Whisk together until smooth. (lumps in the batter will clog the tip of the bottles)
  • Divide into 4 bowls and add 2 or 3 drops of food coloring to each bowl to make blue or purple, green, yellow, and pink batter. Fill a plastic squeeze bottle with each color of batter. You may need to cut the tip to give a larger opening. (see notes for a dye-free coloring)
  • Use the different bottles of colored batter to create a rainbow waffle in the mini waffle maker.
  • Bake the waffles in the mini waffle maker or a larger Belgian waffle maker.
  • Serve with whipped cream, strawberries, sprinkles, and syrup.

Notes

Waffles can be made ahead of time and reheated in the toaster before serving.
Store left-over waffles in an airtight container.
Freeze waffles on a baking sheet and store in a ziplock bag for up to a month. Remove one or more waffles,  defrost and heat in the toaster for a quick and easy breakfast.
