Watermelon and Pineapple Fries

Watermelon and Pineapple fries are a fun, fresh, and healthy dessert fry. Dip them in some Toasted Coconut Yogurt and Lime dip.

Equipment

  • 1 serving platter and bowl for the dip

Ingredients

  • ½ watermelon
  • 1 pineapple
  • 2 cups Toasted Coconut Yogurt
  • 2 tbsp freshly squeezed Lime juice
  • Zest from 1 lime

Instructions

  • Add the lime juice and lime zest to the Toasted Coconut Yogurt and set aside.
  • Cut the watermelon into round pieces about 1/2 inch thick.
  • Peel and slice the pineapple into rounds.
  • Remove the rind from the watermelon and cut the watermelon into "Fries" about ½ X½ inch and 3 inches long.
  • Cut the pineapple into "fries" about the same size as the watermelon fries. Discard the center core.
  • Put the dip into a small bowl and arrange the "fries" on a platter with the dip.
  • Serve chilled.
  • SIS (Simple is Smart Tip) Spice up the fries with a sprinkling of chili powder, and some salt, and grate a little lime zest over the fries.
