Bobbie -A Day After Thanksgiving Sandwich

Originally created by Lois Margolet and named after her Aunt Bobbie Capriotti. The Bobbie is a great way to use up those Thanksgiving leftovers of turkey, stuffing, and cranberry sauce.

Ingredients

  • 1 6-inch baguette
  • 3 ounces turkey breast roasted
  • ¼ cup cranberry sauce
  • ¼ cup stuffing
  • 1 tbsp mayonnaise
  • salt and pepper
  • 1 piece lettuce iceberg or romaine

Instructions

  • Slice the baguette in half. Spread both halves with the mayonnaise. Add the turkey cranberry sauce, and stuffing to one half of the baguette. Season with salt and pepper to taste. Top with the lettuce and the other half of the baguette. Eat immediately.
