Add the oil to a frying pan and saute the onions, garlic, and celery until the onions are translucent. Add to a 6-quart kettle.
Add the broth, lentils, bay leaf, and ham hock to the kettle.
Cover and simmer for 30 minutes.
Add the carrots and simmer another 30 minutes.
For Vegan soup, At the end of the hour, remove the bay leaf. Add the Shiitake mushroom powder, simmer 5 minutes. Serve and enjoy.
At the end of an hour remove the bay leaf and the ham hock. Cut the meat off the ham hock and dice into small pieces. Had the diced ham pieces and shiitake mushroom powder to the soup kettle.
Adjust the salt to taste and simmer another 5 minutes,
